'Joel and the Head of Murray' by Joshua Bentley

During his time steering the ship at Bondi’s Fish Shop, chef Joel Bennetts elegantly broke down an entire Murray cod all in the name of Young Laundry. A religious experience. Before he carted the head off to the stock pot, we photographed it on a stack of YL tea towels and the chef’s notebook in which he’d sketched out the dish of the day an hour earlier. A jolie laide moment, immortalised.
