With four restaurants across two states, another in Japan and his biggest venue yet, Olympus, about to open at Wunderlich Lane in Surry Hills with business partner Sam Christie, it’s safe to say chef-restaurateur and long-term Buffet client Johnathan Barthelmess is busy. Even so, his approach to building a new restaurant brand and writing its menu is highly considered, calling on long-term collaborateurs and a tried-and-tested team to refine the approach. If you’ve ever wondered how the hell a project of this scale comes together, read on as JB talks us through flying his team to Greece, menu tastings while navigating a seafood allergy, his formula for creating a signature dish and how to silence the noise of distraction and critique.

Rewind to the start of this year, Buffet photographer/videographer Dexter Kim and I found ourselves in the fire filled kitchen of Agnes, the restaurant which in 2023 had won Gourmet Traveller’s restaurant of the year (the first Brisbane venue to take the top spot since 1997). The brief was simple — create a brand video that encompasses the Anyday group world, the shoot would go on to be one of our all time favourites and the beginning of a creative collaboration that continues to this day. It was also on this shoot that I met Bianca Marchi and Tyron Simon.

The couple are one half of Anyday and alongside their partners Ben Williamson and Frank Li they definitely seem to know how people like to dine. With 6 venues now under their umbrella and many others in the works, we caught up with the husband-wife duo to better understand what it is that makes a great hospitality group tick.

Stylists deserve more credit. JJ’s magic way with the perfect spoon or scoop of ice cream, the just-so glassware, the didn’t-know-you-needed-it-until-it-was-placed-in-shot napkin can take an image of dinner from great to completely aspirational, and all behind the scenes. After working together on gleaming shoots with Belles Hot Chicken and Heaps Normal, we had to pin her down for the intel on how the hell she makes it all look so effortless.

The creation of our first ‘Proudly For Everyone’ campaign image for Archie Rose began mid-shoot, moments after the team found out they’d landed their long-awaited partnership with Sydney Mardi Gras. What followed was a *vision* from Archie’s Head of Hospitality – flowers, and lots of them, beneath a bottle of their Signature Dry Gin. By seamlessly blending her artistry as an entertainer with her skills as a dessert chef, Tia whips up her bespoke delicacies to take your celebration to the sweet next level. Having experienced the magic at our Buffet party last month (we're still in cake-induced bliss thanks to her display of a 1.5m-long chequered Napoleon cake surrounded by cannoli piped with peach ricotta cream, cherry-topped cream puffs and hazelnut crumb raspberry crostatas!), we couldn’t help but wonder — what does it take to pull something like this all together in the busy world of events?

We called upon the cake goddess herself to unpack her creative process, from conceptualisation to set up of the ultimate dessert experience. Forks ready?
